O projeto \u00e9 um marco para o estado, sendo a primeira vez que uma forma\u00e7\u00e3o com este n\u00edvel de especializa\u00e7\u00e3o t\u00e9cnica e fomento ao empreendedorismo caprino \u00e9 realizada de forma integrada no Cear\u00e1.<\/p>\n<p dir=\"ltr\">A iniciativa, fruto da parceria entre a\u00a0Escola de Gastronomia Social Ivens Dias Branco, o\u00a0Sebrae\u00a0e a\u00a0Associa\u00e7\u00e3o dos Pequenos Produtores e Queijos e Derivados de Leite do Cear\u00e1, busca transformar a produ\u00e7\u00e3o artesanal em um motor econ\u00f4mico e cultural, utilizando como base a pesquisa territorial do renomado Capril Louren\u00e7o, do Sert\u00e3o Central.<\/p>\n<h3 dir=\"ltr\"><span style=\"color: #028245\">O Pioneirismo da Forma\u00e7\u00e3o<\/span><\/h3>\n<p dir=\"ltr\">Diferente de cursos t\u00e9cnicos tradicionais, esta forma\u00e7\u00e3o une a seguran\u00e7a sanit\u00e1ria da\u00a0Dra. Andrea Rosenfeld\u00a0\u00e0 maestria em matura\u00e7\u00e3o da\u00a0Prof\u00aa Helo\u00edsa Collins, criando um precedente \u00fanico para a gastronomia cearense. O foco \u00e9 profissionalizar o produtor e o pesquisador sob a \u00f3tica da valoriza\u00e7\u00e3o do territ\u00f3rio.<\/p>\n<p dir=\"ltr\">Vanessa Moreira, coordenadora do Laborat\u00f3rio de Cria\u00e7\u00e3o, destaca o impacto dessa jornada que come\u00e7a hoje:<\/p>\n<p dir=\"ltr\">&#8220;Este curso \u00e9 um divisor de \u00e1guas. Estamos trazendo o protagonismo do Sert\u00e3o para dentro da cozinha profissional e do mercado t\u00e9cnico. \u00c9 uma forma\u00e7\u00e3o pioneira no Cear\u00e1 porque n\u00e3o ensina apenas a fazer o queijo; ela valida a identidade do nosso leite de cabra, une ci\u00eancia e tradi\u00e7\u00e3o, e prepara o produtor para ocupar espa\u00e7os que antes pareciam distantes.
