O evento ocorre no Convento dos Capuchinhos, localizado na Ladeira da Gruta, Centro, em Guaramiranga, Cear\u00e1. Esta iniciativa integra as a\u00e7\u00f5es da oitava edi\u00e7\u00e3o do Laborat\u00f3rio de Cria\u00e7\u00e3o em Cultura Alimentar e Gastronomia e celebra o V Dia Nacional do Caf\u00e9.<\/p>\n<p style=\"text-align: justify\">Como uma pol\u00edtica p\u00fablica do <strong>Governo do Cear\u00e1<\/strong>, por meio da <strong>Secretaria da Cultura do Cear\u00e1 (Secult)<\/strong>, o projeto destaca a relev\u00e2ncia do investimento estatal na produ\u00e7\u00e3o de conhecimento que valoriza os sistemas alimentares locais. A a\u00e7\u00e3o acontece em um contexto fundamental para a regi\u00e3o, que recentemente obteve a <strong>Indica\u00e7\u00e3o de Proced\u00eancia (IP)<\/strong> do caf\u00e9 da Serra de Baturit\u00e9, consolidando o compromisso do <strong>Governo do Cear\u00e1<\/strong> com a qualifica\u00e7\u00e3o t\u00e9cnica e a autonomia dos produtores cearenses.<\/p>\n<p style=\"text-align: justify\">As inscri\u00e7\u00f5es s\u00e3o gratuitas e podem ser realizadas at\u00e9 o dia 21 de abril. Entre as investiga\u00e7\u00f5es desenvolvidas nesta edi\u00e7\u00e3o, ganha protagonismo o projeto da pesquisadora <strong>Isabelly Giffony<\/strong>, focado no desenvolvimento sensorial e cultural do caf\u00e9 t\u00edpico da regi\u00e3o.<\/p>\n<p style=\"text-align: justify\">A pesquisa de Isabelly explora a cria\u00e7\u00e3o de produtos derivados, al\u00e9m de criar estrat\u00e9gias de marketing para fortalecer a comercializa\u00e7\u00e3o local. Um dos resultados pr\u00e1ticos investigados \u00e9 o prot\u00f3tipo de um drip coffee coletivo, uma solu\u00e7\u00e3o tecnol\u00f3gica pensada para ampliar a presen\u00e7a do caf\u00e9 da serra no mercado de caf\u00e9s especiais.<\/p>\n<h2 style=\"text-align: justify\"><strong>Programa\u00e7\u00e3o: T\u00e9cnica, Pr\u00e1tica e Identidade<\/strong><\/h2>\n<p style=\"text-align: justify\">As atividades t\u00eam in\u00edcio no dia 22 de abril com a apresenta\u00e7\u00e3o musical <strong>Caf\u00e9, Afeto e Mem\u00f3rias<\/strong>, conduzida pelo artista <strong>Wallace Santana<\/strong>. A manh\u00e3 reserva debates sobre os desafios da Indica\u00e7\u00e3o de Proced\u00eancia e uma Master Class sobre a import\u00e2ncia da p\u00f3s colheita com a especialista <strong>Yuki Minami<\/strong>. No per\u00edodo da tarde, os participantes realizam uma visita t\u00e9cnica ao S\u00edtio Parque das Trilhas para observar o sistema produtivo sombreado.<\/p>\n<p style=\"text-align: justify\">No segundo dia, 23 de abril, a programa\u00e7\u00e3o foca na pr\u00e1tica de torra e an\u00e1lise sensorial (cup taste e cupping), com orienta\u00e7\u00f5es dos especialistas <strong>Lidiane Santos<\/strong> e <strong>Eudes Santana<\/strong>. O encerramento ser\u00e1 marcado por uma avalia\u00e7\u00e3o coletiva dos caf\u00e9s produzidos pelas fam\u00edlias locais, refor\u00e7ando a miss\u00e3o do Laborat\u00f3rio de integrar a pesquisa acad\u00eamica \u00e0 realidade pr\u00e1tica dos territ\u00f3rios.<\/p>\n<h2 style=\"text-align: justify\"><strong>Realiza\u00e7\u00e3o e Parcerias<\/strong><\/h2>\n<p style=\"text-align: justify\">A a\u00e7\u00e3o \u00e9 realizada pela <strong>Escola de Gastronomia Social Ivens Dias Branco<\/strong> em parceria com a <strong>EcoarCaf\u00e9<\/strong> e o <strong>Sebrae<\/strong>.
