Funciona em regime de imers\u00e3o, por meio de forma\u00e7\u00f5es transdisciplinares, desenvolvidos em torno das propostas previamente selecionadas. O nome faz refer\u00eancia ao fundador do grupo M. Dias Branco, que financiou a sede doada para o Estado em uma parceria p\u00fablico-privada. O centro de forma\u00e7\u00e3o oferece cursos b\u00e1sicos e profissionalizantes em cozinha, panifica\u00e7\u00e3o e confeitaria, al\u00e9m de mentorias para desenvolvimento de produtos e projetos, por meio do Laborat\u00f3rio de Cria\u00e7\u00e3o em Cultura Alimentar e Gastronomia. Todas as atividades s\u00e3o gratuitas, mediante inscri\u00e7\u00f5es e processo seletivo.
